Millet-Carrot Healthy Cake with Orange

Ingredients

1. Carrot(100g) grated
2. Millet Flour(60g)
3. Whole Wheat Flour(60g)
4. Unsalted Butter / Oil(50g/50ml)
5. Brown Sugar(50g)
6. Cinnamon Powder(1/2 tsp)
7. Cardamom Powder(1/2 tsp)
8. Nutmeg Powder(1/8 tsp)
9. Baking Powder(1 and 1/2 tsp)
10. Salt( 1/8 tsp)
11. Ripe banana(2 full size)
12. Milk(200ml)
13. Orange Juice(100ml)
14. Orange zest(1 tbsp)
15. Walnut, Raisin (2 tbsp) Chopped.
16. Toppings: Sesame seeds(as required)
Preparation Method

Details:
1. Prep in 15 minutes
2. Cooks in 60 minutes
3. Total in 75 minutes
Directions:
Step 1:-
Pre-heat the Oven at 160 degrees C for 15minutes
Step 2:-
Grease 8” by 3.5” tray or mould
Step 3:-
Mix together the millet flour, whole wheat flour, cinnamon powder, nutmeg powder, baking powder, salt in a bowl
Step 4:-
In a large bowl, whisk butter or oil and brown sugar till it turns floppy. Add the bananas & milk, Whisk again.
Step 5:-
Fold carefully the flour mixture in the butter-sugar mixture by spatula
Step 6:-
Add Orange juice and orange zest. Make smooth batter
Step 7:-
Add walnut and raisin after coating some flour dust and fold again with a spatula.
Step 8:-
Sprinkle some sesame seed over the baking mould.
Step 9:-
Bake it at 160 degrees C for 45 minutes.
Step 10:-
Remove from oven and let it cool completely.
Step 10:-
Slice this healthy cake full of fiber.
